| | Couscous Salad | |
| Ingredients: 150g of dried couscous Boiling water Vegetable stock cube (optional) Tomatoes Cucumber Sweet corn Spring onions Butter
Dressing: Sunflower oil Juice of a lemon Salt and pepper | |

| 1. Weigh 150g of dried couscous into a bowl. | |
|  | |
| 2. Add 230ml of boiling water to the couscous. You may want to add a stock cube to the boiling water to add more flavour.
3. Cover the bowl and leave to stand for 5-8 minutes. Add a little butter if you wish.
4. Finely chop the spring onions and fry them gently in a pan. | |

| 5. Add the onions to the couscous when they are slightly brown.
6. Chop the tomatoes and cucumber finely. Add them to the couscous with the sweet corn | |

| 7. Pour 100ml of sunflower oil into a jug. | |
|  | |
| 8. Add the juice of a lemon and a dash of salt and pepper to the oil. Mix together. | |

| 9. Add the dressing to the couscous and stir in well. | |
