 Couscous Salad
 

Ingredients:
150g of dried couscous
Boiling water
Vegetable stock cube (optional)
Tomatoes
Cucumber
Sweet corn
Spring onions
Butter

Dressing:

Sunflower oil
Juice of a lemon
Salt and pepper

 
  
  

1. Weigh 150g of dried couscous into a bowl.

 
  
 

2. Add 230ml of boiling water to the couscous. You may want to add a stock cube to the boiling water to add more flavour.

3. Cover the bowl and leave to stand for 5-8 minutes. Add a little butter if you wish.

4. Finely chop the spring onions and fry them gently in a pan.

 
  
 

5. Add the onions to the couscous when they are slightly brown.

6. Chop the tomatoes and cucumber finely.
Add them to the couscous with the sweet corn

 
  
  

7. Pour 100ml of sunflower oil into a jug.

 
 
  
 

8. Add the juice of a lemon and a dash of salt and pepper to the oil. Mix together.

 
  
 

9. Add the dressing to the couscous and stir in well.

 
  
 

10. Enjoy your delicious couscous salad!
