 Welsh Cakes

 

Ingredients

200g flour

100g butter

75g castor sugar

30ml milk

1/4 teaspoon mixed spice

1 egg

50g currants

 

 Sieve the flour, baking powder and mixed spice together

 

 

Rub in the butter 

Add sugar, currants and egg to ake a firm dough shape

 

 

Make into round dough shape 

 Roll out onto floured board to 1 cm thickness and cut into rounds using cutter

Cook for 3 mins each side on griddle

Cool on wine rack and sprinkle with sugar

 

 

Eat and enjoy!
